Mexican Meatzza
a Rachel Ray made easier by me
1 lb ground beef
1 packet taco seasoning
1 small diced onion
cornbread
sliced green olives (I used about half a jar)
1 red bell pepper diced
1 small can of green chilies drained
1 diced seeded tomato
lots of shredded cheese
Make cornbread in a large skillet (10-12 in.) and cook 10 minutes in oven. Meanwhile, brown your ground beef, and cook onion with it. Drain, add taco seasoning per directions and let simmer. When cornbread is done, top with seasoned meat and cover with cheese. Add all of veggie toppings and bake in oven at same temp as cornbread for about 5 minutes longer.
The whole thing takes less than 30 minutes to make and is SO filling and good! It makes 8 big slices and Jarom and I could each only eat one slice. I added a can of corn for a side item and some chocolate milk... mmm mmm good!
Fruit Pizza
1 roll of pre-made sugar cookie dough
1 regular jar of marshmallow cream
1 regular bar of cream cheese softened
1/2 bag of chocolate chips or 3 squares of bakers chocolate
fruit of your choice- I used strawberries, blueberries, and bananas
Roll cookie dough onto cookie sheet and cook per directions on dough. Mix together marshmallow cream and cream cheese and set aside. Cut up large fruit. Once cookie is done and cooled, spread cream mixture over entire cookie. Melt chocolate. Cover cookie with diced fruit. Drizzle chocolate over fruit and let harden.
Note: The only thing I didn't like was how the bananas tasted the next day on the pizza. They had that sickly sweet taste/smell. Next time if the pizza won't be eaten all in one day I'll skip bananas and do kiwi!

Fruit pizza is one of my most favorite things! I love the idea of just using frozen dough...yum!
